Toasted tahini cookies

Ingredients

  • 235 grams brown sugar

  • 85 grams white sugar

  • One large egg

  • One large egg yolk

  • 170 grams butter (browned)

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 tablespoon vanilla

  • 1 heaped tablespoon cinnamon

  • 50 grams tahini

  • 240 grams all purpose flour

  • 80 grams chopped chocolate. Use any chocolate you prefer or have on hand. I used Cadbury marble chocolate block.

  • Handful of sesame seeds (to sprinkle on top of cookies)

Method

Begin by browning the butter, set aside and allow to cool down. In a medium sized mixing bowl, whisk together the brown and white sugar with the whole egg and egg yolk, until combined. Add vanilla, salt, cinnamon, baking powder and baking soda to the egg mixture. Add the cooled down browned butter into the mixture, mix until combined. Sift the flour into the bowl with the other ingredients, and before combining it together, add tahini and chocolate. Fold the flour, tahini and chocolate in together at the same time. Fold until just combined. Use an ice-cream scooper to shape even sized cookies, bake at 180 degrees in a fan forced oven for 14 minutes, or until the edges have begun to crisp and brown up. Sprinkle with sesame seeds whilst still hot, allow to cool and enjoy!
