Salami meatballs

 

INGREDIENTS

  • 500 grams beef mince

  • 150 grams preferred salami (processed in a food processor)

  • 1 large onion

  • 2tsp

  • 90 grams parsley

  • 90 grams breadcrumbs

  • 1tsp calabrian chilli sauce (optional)

  • 40 grams parmesan cheese

  • 3 cloves garlic (mined)

  • 60 grams tomato paste

  • 2 tsp salt

  • 20 grams butter

    SUGO/SAUCE

  • 1 700 grams jar tomato passata

  • 1 tsp sugar

METHOD

  • Begin by dicing your onion into small pieces, saute them in a pan with butter, allow to cool

  • Place all ingredients into a big mixing bowl (except for the SUGO/SAUCE LIST) along with the sauted onions

  • Combine all ingredients together until the mixture comes to a homogeneous consistency

  • Shape the meatballs into even sized balls, I recommend using an ice cream scooper, although you can roughly eyeball them.

  • Brown the meatballs in a hot frying pan until they develop a golden brown colour on all sides

  • Poor the passata into the frying pan along with the meatballs, with the sugar and allow to cook for 45 min

  • Serve with bread or enjoy with pasta :)
